Watermelon Radish Carpaccio with Lemon Mint Yogurt

Sometimes simple is best when it comes to farm fresh veggies. Watermelon radishes are so lovely in appearance and flavor that they don’t need much in the way of added ingredients. For this vegetarian take on carpaccio, raw radishes are thinly sliced and paired with tangy yogurt, lemon zest, and fresh mint to create an easy appetizer or side dish. Finish everything off with a drizzle of your favorite extra virgin olive oil and a pinch each of salt and pepper and you’re good to go!
