Harvesting Summer Greens

Have you been craving fresh greens to pair with summer fruits like okra, eggplant and peppers? We are now harvesting the following greens that can be used in a variety of ways in the kitchen :

  • Malabar Spinach - a succulent leaf that can become slimy when cooked, and is also eaten fresh in salads or on a sandwich

  • Sweet Potato Greens - flavor retains the essence of a sweet potato and can be cooked or chopped thinly for salads

  • Amaranth - more limited availability, a cooking green with a rich earthy flavor

This week we are planting our remaining summer crops that will remain productive through early Fall, like Asian eggplant, more Malabar spinach, and flowers! On the horizon, we will be seeding our first Fall crops in just a couple of weeks. Our Farm Club is also ramping up to prepare for the Fall season - if you are interested in growing your own Fall and Winter garden as well as awesome educational and social events, stay tuned for more details about upcoming programs!

The Harvest Green Farmers Market is also looking to onboard additional vendors this Fall - specifically savory-type foods and drinks such as coffee, tea, and specialty drinks.
