Harvesting Fennel and Summer Squashes

Village Farm Team,


It’s an exciting time on the farm as we begin to see our harvests include both spring crops and the first of the summer crops. New this week are fennel and summer squashes (zucchini and yellow crookneck)! Fennel is a farm favorite thanks to its crisp texture and mild anise flavor. Since we offer it with the stems and fronds attached to the bulb, you get a multi-use veggie. The bulb can be thinly sliced and added to salads or roasted until golden and caramelized. The fronds can be used like an herb, lending their flavor to pesto, dressings, and other sauces.

Our green beans are flowering and we’re just starting to see the first tiny beans emerge. If you look at the photo below, you’ll see a baby green bean just below the white flower. Green beans are relatively quick growers so we expect to be able to start harvesting by next week. Once we begin harvesting, they should be available for about 2-3 weeks. Not to worry though if you’re a bean lover, we also have long beans coming up that will be available soon after our first succession of green beans finishes up.

We are excited to announce the relaunch of our Harvest Green Farmers Market! The Farmers Market will take place from 8am to noon on the third Saturday of every month beginning Saturday, May 15th. With the rollout of vaccines and continued decline in COVID cases, we feel May is the perfect time of year to relaunch. The Farmers Market will focus on local and sustainable goods with vendors like your very own Village Farm, Wheeler Family Farm, Nando’s Honey, and Young Hustler Coffee. You can find the Farmers Market at 8939 Harlem Road right next to our new neighbors Messina Hof Harvest Green Winery and Kitchen. Make sure to mark the date on your calendar so you can come join us!
