Figs Growing and Harvesting Asian Eggplants

Despite hurricanes and winter storms, our fig orchard is lush, vibrant, and producing beautiful figs! The first trees were planted in the orchard in November 2023 and since then we’ve added even more trees and hosted several volunteer days to keep the space healthy and beautiful. Since our trees are still young, they won’t produce a sizable harvest. When the figs start to mature later this summer, we will be offering them in very limited quantities at the Farm Stand and potentially in Veggie Shares if they produce reliably. We’ll also be hosting another volunteer day in the orchard this fall so stay tuned!

It has been a great summer for our Asian eggplants thus far! We are currently harvesting three different varieties in abundance: Ping Tung, Turkish Delight, and Shinkansen. Ping Tung is a lighter purple Asian variety that has proven to be reliable year after year. Turkish Delight is not quite as slender as the other two varieties and has a green calyx and dark purple color. Shinkansen is a Japanese eggplant that is dark purple with a purple calyx. All of these eggplants have thinner skin than Italian types along with tender flesh without any bitterness. They are perfect in stir-fries, soups, and curries and can also be roasted along with garlic and blended into a flavorful dip. We recommend trying any of these varieties in this easy eggplant stir-fry with garlic sauce or this seared Asian eggplant with lemon oregano white bean purée.
